Here's where you set display related options. Some of the options here require a restart of the game engine to take effect, others don't seem to do anything right now.

Resolution
Default: 1024x768
Sets the game's rez. You have to quit and restart for this to take effect.
Use Fullscreen
Default: Enabled
Tells the game to run in full screen mode. Disabling it will run the game in a window. You have to quit and restart for this to take effect.
Use Hardware Mouse Cursor
Default: Disabled
When disabled, allows the game to replace the mouse with what it wants, such as the nice quill. When enabled, a default system pointer is used.
Anti-Aliasing
Default: 4x
Enables FSAA if your card supports it. It does seem to work, and does seem to require a restart to change settings.
Brightness
Default: 50
This controls how bright the pixels in the game are. If you adjust it above 50, things will tend to wash out to white, below 50 will cause things to crush to black.
Contrast
Default: 50
This controls the saturation of colors in the game. Reducing it below 50 causes things to become more grey and monochromatic. Increasing it above 50 causes colors to over saturate and look somewhat cartoony.
Ambient Light
Default: 25
Unknown what this does, it appears to have no effect yet.
Specular Intensity
Default: 100
Unknown what this does, it appears to have no effect yet.
GFX: Disable Transform and Lighting
Default: Off
Unknown what this does, it appears to have no effect yet. Presumably turns off hardware T&L and uses software instead. Not sure if it works or not as I've not yet tested it on a card that doesn't have T&L (they are very scarce these days).
GFX: Disable Bump-Mapping
Default: Off
Unknown what this does, it appears to have no effect yet. Near as I can tell, nothing on the cloth map is bump mapped so this is not yet relevant.
GFX: Disable Point Sprites
Default: Off
Unknown what this does, it appears to have no effect yet. The cloth map also doesn't seem to use point sprites, so again not relevant.
GFX: Throttle Frame Rate
Default: On
Not sure. I'd presume it means v-sync, but even with it on, the game still seems to not use that.
GFX: Disable Depth of Field Effect
Default: On
Unknown what this does, it appears to have no effect yet.
Max Texture Atlas Size
Default: 1024X512
Unknown what this does.
Maximum Mip Map Levels
Default: Default
Sets how many texture mip levels your video card can generate. Not sure if this applies to the cloth map or not.
Shadows
Default: Low Res
Unknown what this does, it appears to have no effect yet. Again, doesn't seem to apply to the cloth map, nothing seems to be shadowed.
Amount of Ground Cover
Default: Normal
Unknown what this does, it appears to have no effect yet.
Unit Scale
Default: Normal
Changes the size of the pewter pieces on the cloth map. In particular, it changes how they scale as you zoom out. Larger setting create larger pieces when zoomed out. These pictures show the various sizes, taken at a maximum zoom level:
Font Smoothing
Default: Enabled
Changes if the game engine smooths out (anti-aliases) the fonts.
Advanced Lighting
Default: Enabled
I'm not sure what this is supposed to do, however presently it seems if you disable it, the graphics on the cloth map become rather messed up, and you can't see the map textures properly. Best to leave it enabled.
Softness (Adv. Lighting)
Default: 75
Unknown what this does, it appears to have no effect yet.
